soarer is a good choice actually because of where the fuel tank is located. Pretty sure it makes it easier for track regulations.
Had a quick look and it seems that 1800kg is the popular number but as you say 100kg can be lost in the seats take out the air con heater matrix eroneous wiring and could pheasibly get it to 1600kg so with a vvti 1uzfe on throttle bodies it would be around the 400hp mark giving 250hp per ton then if it was charged that will jump hugely.
On the other hand start with an is200 and you would be looking 300hp per ton n/a
So many choices lol currently sorting a unit with my friend and as soon as that is secured i will be buying a shell/donor car

is200 is a very good chassis. If you just want a track car, put a 13b into an MX5
